I made this tonight and it was easy, quick, delicious and healthy! I didn’t have turkey tenderloin but I had one and a half pounds of fresh turkey cutlets, which is what I used. I used the vegetables suggested but had to sub shredded cabbage for the Brussel sprouts. I added sliced carrots. I didn’t want to add anything with added sugar so I skipped it and added a squeeze of fresh lemon. The flavors were sweet due to the sweet potato and caramelized onion. It cooked quickly and we had to have seconds it was so good! I think this recipe would be delicious with chicken, too. Love the idea of combining white potato and sweet potatoes. So healthy!

After your muffin tin meatloaf became the most requested dish in the house, I needed a break & something new in my rotation. Trying to convince 2 boys that there is more to life than beef and bbq sauce is not easy. Then I found your one sheet pan chicken fajitas. Chicken comes out moist and tender not dry like I thought they may be. I leave in my veggies a little longer for that burnt edges/carmelized effect. Great with chips, tortillas or just on their own. A huge success and new fan favorite right out of the gate! Now kids will expect this regularly like Taco Tuesdays. Not mushy, came out fully cooked, not dry either, very juicy. I used Panko bread crumbs & Kinder’s mild bbq sauce. For 2 lbs of ground beef (yielded about 18 meatloaf muffins), I used 2 eggs (vs 1.3 per ratio), about 1.5 cups panko and was conservative on bbq sauce in the mix. I prefer adding sauce to the top after 10 mins in the oven and then everyone can add more to taste on their plates. Will be browsing your recipes for more quick and easy ones. Thank you!
